Making up your own Recipes

I love to cook. My stepmom began teaching me to cook and bake when I was about ten years old. She cooks “old school”. There usually aren’t recipes… and if there are, they are never followed exactly as written. We cook much of our foods from scratch. For instance… I actually MAKE pasta sauce. I don’t buy it in a jar or can very often.
I have often had someone over for dinner, who then asked me for a recipe to something I’ve made. It’s hard for me to remember exactly what I used, and how much of it. It’s near impossible for me to write them down at times.
My daughters are learning to cook more. My oldest is nearly 19, and has an 8 month old daughter. She also is entering college full time soon. She just doesn’t have the time to cook completely from scratch at all times, or to experiment. She also truly just doesn’t want to cook that way. There’s nothing wrong with that. I’m not mad or anything.
She’s asked me to write some of my recipes down for her. *blink* What?? Oh lordy. I don’t know if I can! I”ve been slowly working on this for awhile now. It’s even harder than I thought it would be.
I also love to experiment, and just “throw things together”. Today, I opened the freezer to see what I wanted to cook. I noticed some frozen (yes, I DO buy pre-made stuff at times) ravioli. This stuff is excellent, and stuffed with sausage and cheeses. Hmmmm ok.
I whipped up some red pasta sauce. I then boiled the ravioli for five minutes as directed. I tossed that in a large bowl with the red sauce. I then chopped up a package of Smoked Sausage, and browned it in a skillet. I added this to the mixture in the bowl. After mixing it well, I dumped it all into a large baking pan, and topped it with a mixture of three kinds of shredded cheese. Baked it at 350 for 15 minutes… and dinner is served. SO yummy. I hadn’t done this exactly this way before, but you can bet I will again at some point.

I understand what you are saying. I’ve had experience about it. I’m a 24 year old guy that loves to cook. I learned it, like you, from my mom, old-school style. We did even cook over a fire from wood. She taught me how to cook by taste, not by recipe. And most of my friends asked me the recipe, i just can give the ingredients and not the exact amount. because it is also subject to personal taste. When people ask me how to cook better, i just told them to learn how to “taste” first.
