Gnocchi to Knock Your Socks Off

I traveled from my parents house to my apartment to make two sheet pans full of Gnocchi for my families Italian feast tomorrow night. Gnocchi is a pasta mae out of egg, flour and potato. Here is the recipe:
- Two eggs
- 1.5cups of flour
- 3 cups of mashed potatoes (5 whole potatoes)
- 1 tablespoon olive oil
- a pinch of salt
- Cook potatoes in the oven. About an hour to an hour and a half at 400 degrees F. Remember to poke holes in the potatoes so they do not explode
- Once potatoes are cooked and cooled, remove the skins and mash. Remove as many lumps as possible
- Add eggs and olive oil to the potatoes (in a bowl). Mix well
- Add flour and salt. Mix well
- Dump onto floured surface. Knead the dough until it stays together in a clump. Add more flour if the dough is sticky
- Break off chunks of dough and roll into a snake. Cut the snake into little chunks. Make impression on each piece with either a fork or your thumb
- Allow to dry in a floured baking sheet for 2 hours or over night
- To cook: boil water and add Gnocchi. Cook for around two minutes. Strain, add sauce and enjoy!
