Over the last decade the US government has provided $165 billion in subsidies to the largest 20% of farms. These farms grow lots of what we eat in a mass produce fashion. What if some of that money had been used to get small local organic farms up and running? We could all eat healthier “unpreserved” fruit and vegetables, meat, eggs, etc.
Obviously there is no incentive for the top 20% to do this, they would lose some market and eventually lose subsidies. As far as the health aspect goes, you can do something now (well next spring anyway). Start a small garden of your own. If you have the space or even if you have to use small beds, there is little stopping you from growing a few tomatoes, squash or onions. If you try it you will taste the difference and have the satisfaction of knowing you grew that all by yourself.
