Daytona 500 Sausage Potato Soup

For those of us in the areas of the country where it’s still plenty cold the Daytona 500 does not mark the start of Spring. It’s still chilly in a vast majority of the country and I have just the race day recipe for you. It requires a little preparation and all day in a Crock Pot.

Daytona 500 Sausage Potato Soup:

Ingredients
1 lb. Jimmy Dean Sage Pork Sausage *
1 bag Potatoes O’Brien (bag size depends on how much potato you want)
1 Onion, diced
1 tablespoon Minced Garlic
1 can of Chicken Broth
2 cups of Water
1 can of Campbell’s Cream of Chicken Soup
1 can of Campbell’s Cream of Celery Soup
2-3 cups of Milk (depending on how much soup you want)
Cheddar Cheese (for garnish)

Directions
Dice onions finely (I recommend using a Pampered Chef Cutting Edge Food Chopper). Heat skillet on medium-high heat, add onions and garlic. Cook onions until almost translucent then add sausage. Brown sausage until it crumbles insuring that it is cooked through.

While you are waiting on your sausage to cook start heating up your Crock Pot. Add water and chicken broth to Crock Pot.

After you completely cook your sausage, onions, and garlic drain it using a suitably sized colander. Add sausage and Potatoes O’Brien to Crock Pot. Stir mixture together well and wait for 90 minutes or until mixture gently bubbles.

Once the mixture is gently bubbling add the soups and milk. Incorporate all ingredients together well and allow to cook. Stir the soup occasionally to prevent sticking. It can cook for as long as you want but I’d recommend at least four hours after adding soups and milk. Serves 10 hungry NASCAR fans.

* You can use two packages of Jimmy Dean Low Fat Sausage if you’re watching out for fatty foods.
